Cardamom Buns / Cinnamon Buns

When growing up, my Mother always heated the milk and melted the butter. This recipe uses room-tempered cubed butter directly into the milk, and then adds flour. This is an amazing evolution in making cinnamon buns, as the butter almost becomes “laminated” into the dough and creates a fantastic cinnamon bun!
Tip; To convert from fresh yeast to dry, multiply the fresh yeast with 0.4 (Example 50 gram fresh yeast X 0.4= 20 gram dry yeast)
Makes 24ea buns
Dough
490 grams of Milk heated to 38 Celsius or 100.4F. If using dry yeast, the liquid should be slightly warmer, but not too hot, as this will kill the yeast.
50-gram fresh yeast or 20-gram active dry yeast (2tbl)
150-gram room-tempered unsalted butter, cut into small cubes
125-gram sugar or 2/3 cup
1/2 tsp salt
1 Tbls ground cardamom
13 dl All-purpose flour (13dl = 800 grams)
Heat up milk and dissolve the yeast, in the mixing bowl. Once the yeast has dissolved, add the sugar, butter, salt, and cardamom; in a mixer, let it mix until the butter is melted or almost melted, added flour and once it comes together, keep working for another 5 minutes.
Let the dough to proof for 30 minutes in a warm place, covered.
Roll the dough out, do not use too much flour on the surface, as it will be hard to roll it out, and the buns will be dry. Roll it out to the size of 60x40 cm.
Spread a layer of the filling and roll it up, starting from the long side, roll it up like a rolling cake. cut into 1” pieces and place in baking cups, or in a form standing up, a braid, or your choice of form!
Cover the buns for another 30 minutes, brush with the sugar water, sprinkle the pearl sugar, and bake at 375-400F or 225 C for 12-15 minutes.
Cool on a rack and enjoy with a glass of milk!
Filling
150-gram Unsalted butter
150-gram sugar
2 tbsp ground cinnamon
1 tbsp bread crumbs
Mix all of the ingredients and use them as a filling in the buns.
To brush the buns with
1 dl water
1 dl sugar
Bring to a boil and use to brush on the proofed buns, before going into the oven.
Topping
Pearl sugar
