Freja likes to bake but doesn’t like to put the effort into portioning each cookie out. So, we decided to make a sheet pan full and cut them out, crunchy on the outside and gooey in the middle, yum! or as we say in Sweden, mumsfilibaba!

Freja’s Brownie Bites.

This recipe makes about 24-25 ea depending on how you cut it.
Preheat oven to 350 F

1 cup soft butter

1 cup granulated white sugar

1/2 cup Dark Brown sugar

2 eggs

2 Cups all purpose flour

2/3 cup cocoa powder

3/4 tsp baking soda

1/4 tsp salt

1 cup semi sweet chocolate chips

1/2 cup milk chocolate chips

In the mixer fitted with the paddle, add butter and make sure it’s soft by letting the mixer go for a minute or two. Add sugar, eggs, and vanilla, mix until fluffy. Mix Flour, cocoa powder, baking soda, and salt, and mix into the butter mixture until properly combined. Mix in the chocolate chips and spread on a silpat or parchment paper on a sheet pan, one whole piece. Bake for 12-15 minutes, maybe longer if you think it’s needed, touch and feel the cookie. It will be harder than what you feel directly out of the oven. Smack the sheet pan on your counter-top a few times so it all comes together a bit. Let cool in the pan for a few minutes, cut, and transfer to cookie grate.
