Hazelnut Cake (Brownies)or in Swedish - Hasselnöts Kaka

or, as we call it in Sweden, Hasselnöts Kaka. A very popular cake growing up, easy to make and yields good without a lot of work.

You can make this in a sheet pan or in a round form, I prefer the sheet pan method as you get a great crust along the edges.Crunchy edges and gooey center!

You will need

224 gram Soft Butter

275 gram Granulated sugar

2 ea Large Eggs

2 Tbls Vanilla sugar or 1 tsp vanilla extract + 1 Tbl Powdered Sugar

50 gram Cacao powder

170 gram Ap Flour

1 tsp Baking powder

80-100 gram Hazelnuts, crushed

25 gram Bitter sweet Chcocolate chips (optional), baking chips is good or whatever you like to use

What to do:

Sift the dry products together, except nuts and chocolate chips, in a medium sized mixing bowld, set aside

Cream the butter and sugar together in a mixer with the paddle attachment

Add the eggs to the butter cream and mix well.

Once the eggs are incorporated, add the flour cocoa mix and blend on low speed, just to mix it together

In a 12”x12” add parchment paper and spread the chocolate mixture out evenly

Sprinkle the nuts and chocolate chips on top and bake for 12-15 minutes in 400°F
